The 2012 La Perle Grand Cru Champagne from Ayala is made with a blend of 80% Chardonnay and 20% Pinot Noir grapes, and matured on the lees for eight years before bottling. Aromas of clove-studded orange, gingerbread, vanilla, soft tobacco and hazelnut fill the nose, complemented by notes of menthol and baked apples on the palate. This is a versatile wine that will pair well with roasted lamb, Mirabelle plum tart or even hard cheeses.
