A rising star in the world of Champagne, Aurelien Suenen left his promising career in basketball to take over the family Domaine in 2008. This vintage from 2015 has benefited from the Oceanic surroundings of Marne and the clay-limestone soil of the Oiry Grand Cru. Made with 100% organic Chardonnay grapes, this Champagne offers a bouquet of mandarin, pear and raisin bread on the nose, followed by elegant notes of apricot, creamy dried fruits and citrus on the palate. The elegantly concentrated finish lingers on with mineral salinity and zesty acidity.

The 2012 La Perle Grand Cru Champagne from Ayala is made with a blend of 80% Chardonnay and 20% Pinot Noir grapes, and matured on the lees for eight years before bottling. Aromas of clove-studded orange, gingerbread, vanilla, soft tobacco and hazelnut fill the nose, complemented by notes of menthol and baked apples on the palate. This is a versatile wine that will pair well with roasted lamb, Mirabelle plum tart or even hard cheeses.

Benoit Lahaye is passionate about his land and his wine – he works biodynamically in vineyards and is one of the few people in Champagne to plough using a horse. In the winery he works as hands-off as possible and in this rosé even uses amphorae for aging half of the wines. This is a structured, full-bodied rosé packed with wild strawberry, raspberry and rose petals. The palate is very vinous with a delicious, fresh, minty finish.
