This Welsh sparkling wine comes from two separate plots on the edge of Monmouth. They are fermented in a mix of cement eggs, stainless steel and Austrian oak on the lees for 12 months. They then spend a further 5 years on the lees in bottle. On the nose it is reminiscent of baked apples with sultanas and custard. The palate reflects the nose but with a delicious lift of candied oranges.

This rose from the region of Franschhoek is made with a blend of grapes including Mourvedre and Grenache and is perfect with shellfish or a seafood salad. The wine is laden with cherry, pink lady apple and notes of hedgerow fruits.

The Argyros Estate in Santorini was founded in 1903 and owns some of the oldest Assyrtiko grape vines on the island. There are aromas of wet stones, white pear and citrus on the nose, leading to a delicious dryness on the palate with notes of lemon zest, white flowers, grapefruit peel and a classic salty finish. A perfect wine for freshly roasted seabass or fried white bait.
